Yield: Approximately 30 bites
Ingredients for Cajun Mashed Potato Bites
3 cups mashed potatoes (leftover or freshly made)
2 cup shredded pepper jack cheese
1/4 cup chopped green onions
1/4 cup Cajun seasoning
2 large eggs, beaten
1 1/2 cups breadcrumbs (Panko or regular)
Oil for frying (vegetable or canola)
Ingredients for Creamy Cajun Dip
1 cup sour cream
1 cup mayonnaise
2 Tablespoons Cajun seasoning
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley (plus extra for garnish)
Salt and pepper to taste
Directions for Cajun Mashed Potato Bites
In a large bowl, combine the 3 cups mashed potatoes, 2 cups shredded pepper jack cheese, ¼ cup green onions, ¼ cup Cajun seasoning to taste. Mix well until all ingredients are evenly incorporated.
Using your hands, form the potato mixture into small balls, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.
Set up a dredging station with two shallow bowls. In one bowl, place the 2 beaten eggs. In the other bowl, add the 1 cup breadcrumbs. Dip each potato ball into the eggs, ensuring it's fully coated, then roll it in the breadcrumbs until completely covered.
Pour about 2 inches of oil into a deep, heavy-bottom pot like a Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C).
Carefully add the coated potato balls to the hot oil in batches, being careful not to overcrowd the pan. Fry them for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
Directions for Creamy Cajun Dip
In a medium-sized mixing bowl, combine the 1 cup sour cream and 1 cup mayonnaise. Stir until the mixture is smooth and well-blended.
Add the 2 Tablespoons Cajun seasoning to the creamy mixture. Mix thoroughly to ensure the spices are evenly distributed.
Stir in the 1 Tablespoon lemon juice and 1 Tablespoon chopped parsley. Add salt and pepper to taste, adjusting the seasoning as needed.
Cover the bowl with plastic wrap or transfer the dip to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld together. Garnish with additional parsley just before serving.
Helpful Tips
Consistency Matters: Ensure your mashed potatoes are thick enough to hold their shape. If they're too runny, add a bit of flour or cornstarch to thicken them.
Spice Level: Adjust the Cajun seasoning to taste. If you prefer a milder flavor, reduce the amount or choose a less spicy blend.
Make Ahead: These potato bites can be prepared ahead of time and stored in the refrigerator for up to 24 hours before frying.
