However, this roasted cauliflower is full of garlic and lemon flavor and topped with mounds of freshly grated parmesan cheese. This side dish deserves its moment in the spotlight!

Ingredients

  • 1 large head of cauliflower, cut into florets

  • 3 Tablespoons olive oil

  • 6 cloves garlic, minced

  • 1 lemon, juiced

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup grated Parmesan cheese

  • 2 Tablespoons fresh chives, chopped

  • Crushed red pepper flakes (optional)



Directions


Preheat your oven to 425°F.


In a large bowl, toss the cauliflower florets with 3 tablespoons of olive oil, ensuring they are well coated. Add the 6 cloves of minced garlic, the juice of one lemon, and salt and pepper to taste.


Mix everything together thoroughly.


Spread the cauliflower evenly on a large baking sheet. Make sure the florets are in a single layer to ensure even roasting. Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the cauliflower is tender and golden brown. Stir halfway through cooking for even browning.


Once the cauliflower is roasted to perfection, remove it from the oven and sprinkle the ½ cup grated Parmesan cheese over the top. Return the baking sheet to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.


Remove the cauliflower from the oven and transfer it to a serving dish. Add a pinch or two of crushed red pepper flakes if desired. Sprinkle the 2 tablespoons of freshly chopped chives over the top for a burst of color and flavor.
