Oats. Rolled oats are thicker and have been steamed for a shorter amount of time than quick oats. They typically cook faster and have a smooth and creamy texture. Quick oats are smaller than rolled oats and they’re more processed. The end result tends to be a bit on the mushy side. Steel-cut oats have a firmer, chewy consistency due to less processing.
Strawberries. I recommend using fresh strawberries for this recipe.
Double-Up. This recipe is for an 8x8 baking dish. I like to make a double batch so I can put one in the freezer for an easy breakfast on a busy morning.

Serves: 4
Ingredients
2 cups rolled oats
1 1/2 cups milk
1/4 cup lemon juice
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp salt
1 cup fresh strawberries, sliced
1 Tbsp lemon zest
2 eggs
½ tablespoon butter or coconut oil
Directions
Set your oven to 350°F and prepare an 8x8-inch baking dish by lightly greasing it with ½ tablespoon of butter or coconut oil.
In a large bowl, combine the rolled oats, baking powder, and salt. Stir until evenly mixed.
In a medium bowl, whisk together the eggs, almond milk, lemon juice, honey or maple syrup, and vanilla extract until well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well incorporated.
Gently fold in the sliced strawberries and lemon zest, ensuring they are evenly distributed throughout the mixture.
Pour the mixture into the prepared baking dish. Smooth the top with a spatula to ensure even cooking. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the mixture is set.
Allow the baked oatmeal to cool slightly before serving.
How to Store Strawberry Lemonade Baked Oatmeal
Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or oven before serving.
How to Freeze Strawberry Lemonade Baked Oatmeal
This recipe can be frozen whole or in individual servings for up to 3 months.
To reheat the whole pan, thaw in the refrigerator for 24 hours. Bake covered with aluminum foil in a preheated 350-degree oven for approximately 20-25 minutes or until heated through.
Individual servings can be reheated in the microwave for a couple of minutes or until heated through.
